Healthy Baked Chicken Nuggets

Chicken nuggets are a staple in any household with kids. Here's a healthy and delicious alternative to the store bought nuggets.

Baked Chicken Nuggets
2 large boneless, skinless chicken breasts
2 tsp olive oil
6 tbsp Italian seasoned breadcrumbs
2 tbsp panko
2 tbsp grated parmesan cheese
olive oil spray

Put olive oil in a bowl. 
Mix breadcrumbs, panko, and cheese and put in a separate bowl. 
Preheat oven to 425. 
Spray a baking sheet with olive oil spray and set aside. 

Cut up chicken breast into bite size pieces.
Dip a few pieces in the olive oil and make sure they are coated. 

Dip the olive oil coated chicken into breadcrumb mixture. 

Make sure the pieces are completely coat and place on baking sheet. 
Lightly spray the top with olive oil. 

Put in the oven for 8-10 minutes, then flip and cook an additional 4-5 minutes. 

Dig in!
